The Humble Potato
A potato is one of the most versatile foods you can eat. From mashed potatoes, twice baked potatoes, potato soup and yummy baked potatoes – there are so many potato recipes! Potatoes are rich in minerals your body needs. With the exception of vitamin A, potatoes are full of just about every vitamin. They are also high in potassium, iron, copper and especially B6.
So many people think potatoes are bad for people trying to shed a few pounds, but really, it’s what you put on the potato that can be bad for your diet. Most people fill a potato with lots of butter, sour cream and cheese The best way to eat a potatoe if you are trying to lose weight is to top is the a low-fat yogurt or sour cream, salsa or I Can’t Believe It’s Butter spray. Potatoes really fill you up and a small potato is only 3 weight watcher points.
Potato leek soup is full of vitamins, easy to prepare and delicious to eat. Take 3 medium russet potatoes and scrub them clean. Slice them into cubes and set aside. Take 3-4 leeks and wash them well because dirt likes to hide in the layers of the leek. Once clean, slice the leek into small pieces. Spray the bottom of a dutch oven with cooking spray and sauté the leeks until soft. Mix a packet of butter buds with ½ cup of warm water and add to the pot. Add 4 cups of water, the potato cubes, some salt and pepper and let cook.
If you prefer a pureed soup, ladle 2-3 cups of the soup into a blender and liquefy. Add the soup to a separate bowl and put the rest in a blender until all the soup is pureed. It’s good to leave a few of the potatoes and leeks in the soup for texture. Bon Apetite!
